Sure you can. I make green tea ice cream so that would work. Get the soy or rice ice cream let it soften and mix in some pumpkin and some pumpkin pie spice and refreeze. I will try that too. Don't forget the pumpkin pie spice, that would be the key to the flavor. I remember that pumpkin ice cream and it only came out during the fall months. PuterWitch <puterwitch wrote:

I used to get pumpkin ice cream years ago, but now I don't drink milk or eat ice cream. I wonder I fI could do this too:

get some vanilla soy ice cream and mash some of the pumpkin into it, smooth it all in, ya know, I guess it will melt a bit, the refreeze it.

I dunno...... maybe.... then I would have my pumpkin ice-cream?

I bought the autumn addition of "Veggie Life" magazine and made this for todays morning snack. Delicious! Made me feel like the holidays are in the air.

 

Pumpkin Soy Milkshake

 

1 ripe medium banana frozen

4 tablespoons frozen apple juice from concentrate

1/4 cup of pumpkim puree, canned or fresh cooked

1 scoop of vanilla soy ice cream

1/3 cup soy milk

ground pumpkin pie spice or cinnamon to taste

 

Cut frozen banana in 3-6 chunks. Place all ingredients in a blender or food processor and blend until smooth.

Pour into two tall glasses and serve. Top with a shake of cinnamon or pumpkin pie spice.
