Guest guest Posted September 10, 2005 Report Share Posted September 10, 2005 My sweet Mom can't find her glasses half the time and thinks she's upstairs when she's really downstairs but she put her finger right on her recipe for all of us. This is very good and easy. My older nephew used to help her make this all the time. I'll look for her traditional hard to make fudge recipes I won't attempt. They are always smooth, melt in your mouth and never gritty! OK Here it is: "Chocolate Tater Fudge" 2 medium potatoes (about 10 ounces) peeled and cut into chunks 1 to 2 Tablespoons milk 1 6 ounce package semi sweet chocolate morsels (1 cup) 1 cup peanut butter 1 tsp. vanilla 3 cups powdered sugar 1 cup finely chopped peanuts In a large saucepan cook potatoes covered in boiling water for 20 mins. or until very tender. Drain and mash with just enough of the milk to make fluffy and set aside. (Should be 2/3 cup of potatoes) In a heavy 3 quart saucepan heat chocolate pieces over very, very low heat until melted, stirring constantly. Rremove from heat and stir in potatoes, peanut butter and vanilla. Stir in powdered sugar. Stir half the peanuts into mixture. Turn mixture into a 9X9 baking pan. Press down evenly. Sprinkle with remaining peanuts, press them down lightly into candy. Cover and chill until firm.
