I usually buy several bags and freeze. Double Chocolate Mint Cookies 1 1/2 cups (10 oz pkg) Mint flavored chocolate morsels 1 1/4 cups all purpose flour 3/4 tsp. baking soda 1/2 tsp. salt 1/2 cup butter, softened 1/2 cup firmly packed brown sugar 1/4 cup sugar 1/2 tsp. vanilla extract 1 egg 1/2 cup chopped nuts Preheat oven to 375 degrees. Melt over hot (not boiling water) 3/4 cup of the mint chocolate morsels and stir until smooth. Remove from heat and cool to room temperature. In a small bowl combine flour baking soda and salt. Set aside. In large bowl combine butter, brown sugar, sugar and vanilla extract and beat until creamy. Add melted morsels and egg, beat well. Gradually blend in flour mixture, Stir in the remaining 3/4 cup mint morsels and nuts. Drop by rounded tablespoonfuls onto greased cookie sheets. Bake at 375 degrees for 8-9 minutes.
