"Scandinavian Almond Bars" 1 3/4 cups all purpose flour 1 cup sugar 1/4 cup ground almonds 1 cup butter or matgarine, softened 1 egg 1 tsp. ground cinnamon 1/2 tsp. salt 1 egg white 3/4 cup sliced almonds pinch of cardamom if desired Preheat oven to 350 degrees. In large bowl combine flour, sugar, ground almonds, butter, egg, cinnamon and salt (cardamom too if used). Beat at low speed scraping bowl often until well mixed, 2-3 minutes. Divide dough in half. Press each half onto a cookie sheet to a thin 1/16-inch thickness. In a small bowl, beat egg white with a wire whisk until foamy. Brush egg white over dough, sprinkle with almonds. Bake 12-15 mins. or until very lightly browned. Immediately cut into 2-inch squares and remove from pan. Cool on wire rack. Store in a tightly covered container.
