Orange Glazed Pumpkin Cake Cake ~~~~ 2 cups packed light brown sugar 3/4 cup butter flavor shortening 4 eggs 16 ounce can of pumpkin 1/4 cup water 2 1/2 cake flour (if using all purpose flour, minus 2 tablespoons per cup of flour, works perfectly) 4 tsp. baking powder 1 Tbspn. pumpkin pie spice 1 1/2 tsps. baking soda 1 tsp. salt 1/2 cup chopped walnuts 1/2 cup raisins (optional, I know many people can't stand them LOL ) Glaze ~~~~~ 1 cup confectioner's sugar 3/4 tsp. orange zest (grated orange peel) 4 tsps. orange juice (little more if desired) Optional* little more chopped walnuts if you desire Preheat oven to 350 degrees and grease a 12 cup bundt pan. Combine brown sugar and shortening in a large bowl. Beat until creamy. Add eggs one at a time, beating well after each addition. Stir in pumpkin and water. In a medium bowl combine flour, baking powder, pumpkin pie spice, baking soda and salt and stir to mix well. Add the dry mixture to the pumpkin mixture, beating at a low speed until well blended. Beat on medium speed about 2 minutes. Fold in the walnuts and raisins Spoon mixture into the bundt pan and bake 50-60 minutes or until toothpick inserted comes out clean. Cool 10 mins before removing to wire rack or serving plate to cool. For the glaze: Combine confectioner's sugar, zest and orange juice. (add a few walnuts if desired). Spoon glaze over top of cake, letting the excess glaze run down the sides of the cake.
