Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

4 large ripe, flavorful Comice or Anjou pears -- halved, cored &

cut into 1 " chunks

1/4 cup anisette or Poire William

finely grated zest and strained juice of 1

lemon

1 cup granulated sugar

Place the pears, anisette, lemon zest and juice, and sugar in the insert of the

slow cooker. Cover and cook on high for at least 4 hours or until the pears are

soft. Cool slightly, and then use a slotted spoon to transfer the pears to a

blender or food processor. Blend or pulse for 10 to 15 second or just until the

pears are mushy. With the blender or processor running, slowly pour in enough

of the cooking liquid to make a thick puree. Store the rest of the cooking

liquid for other uses, such as drizzling over fresh fruit or sorbet.
