Sorry this is not in format…please excuse. I hope this is what you are

looking for. BTW, I got this from Chet’s Recipes #237 newsletter and it was

sent in by one of the list members. ~Danell~

 

VEGAN CORNBREAD

Mix together the following:

1 cup plain cornmeal

2 Tbs. wheat germ

1 tsp. salt

½ cup whole wheat flour

½ cup oat flour (whiz oats in your blender)

1 Tbs. Rumford Baking Powder

 

Blend the following in a separate bowl:

1 ¼ cup water or vegan milk of your choice

¼ cup sugar free applesauce

1 ½ tsp. EnerG Egg Replacer

 

Combine together the wet and dry ingredients. You may have to add some more

water, if too thick. Bake in a hot oiled pan at 450 degrees for about 20

minutes or until golden brown. A black iron skillet works best. If you want

a sweet cornbread, just add some honey to the water. This recipe works well

for a cornbread dressing, since it is not so sweet. The applesauce replaces

the oil. Enjoy!

I would also love the recipe for the meat subs using the gluten!

 

May I reprint the tofu patty recipe on my site, with credit to the

chef (of course)?

 

If you only have regular tofu for the banana pie, you can try using

it. I have found that silken tofu really does make a smoothier and

creamier dish. I also love using it because I can buy several boxes

and it keeps forever unrefrigerated!
