Pasta With Pesto and Beans

 

Serve with tossed salad. Penne pasta also works well in this dish.

Ingredients

1 (7-oz.) package BUITONI=AE Refrigerated Pesto with Basil

8 ounces rotini pasta, prepared according to package directions =

1 (15-oz.) can cannellini beans, rinsed and drained

1/3 cup chopped, drained oil-packed sun-dried tomatoes

1/8 teaspoon red pepper flakes

1/4 cup grated Parmesan cheese

 

Directions

COOK pesto, beans and tomatoes in medium saucepan. Cook over medium-low hea=t.

Add pasta, red pepper flakes and cheese; stir well to combine.

 

 

Servings: 4

Caesar salad dressing combined with Thick and Smooth Taco Sauce turn ordina=ry

tacos into a zesty luncheon fare bursting with flavor. Cheese, avocado, =corn

and green chiles form the basis for these mouth-watering tacos.

Ingredients

10 ounces romaine lettuce, torn

2 cups shredded cheddar cheese, divided

1 avocado, pitted, peeled and diced

1 (4-oz.) can ORTEGA=AE Diced Green Chiles

1/2 cup canned black beans, drained and rinsed

1/4 cup frozen whole kernel corn, thawed

1/3 cup Caesar salad dressing

1/4 cup ORTEGA=AE Medium Taco Sauce

12 ORTEGA=AE Taco Shells, warmed

2 cups diced tomato

 

 

 

Directions

COMBINE lettuce, 1 cup of the cheese, avocado, chiles, beans and corn in a

=large bowl.

 

COMBINE dressing and taco sauce in a small bowl; mix well. Pour over lettuc=e

mixture; toss well to coat.

 

FILL each taco shell with salad mixture; top with remaining cheese and

toma=toes.

Ingredients

1/4 pound candy-coated chocolate pieces

1/2 pound almond bark, (or other melting chocolate)

1 pound small pretzels or pretzel sticks

 

 

 

Directions

Pour candy-coated chocolate pieces into a small bowl. Melt almond bark in t=he

top of a double boiler. Dip pretzels into the melted chocolate; roll

cho=colate-covered pretzels in bowl of candy-covered chocolate pieces; a few

pi=eces will stick to each pretzel.

 

Lay resulting clusters on wax paper to cool. Serve when chocolate is no lon=ger

sticky to the touch; refrigerate.

1 ripe mango, peeled

1 papaya, peeled

1/2 red bell pepper, seeded, stemmed

1/2 yellow bell pepper, seeded, stemmed

1/2 green bell pepper, seeded, stemmed

1 serrano chile, seeded, stemmed

1 red onion, peeled and finely chopped

3 tablespoons fresh lime juice

2 cloves garlic, peeled and minced

1 1/2 teaspoons liquid hot sauce

 

 

 

Directions

Combine mango, papaya, peppers and chile in food processor and pulse lightl=y.

Do not over blend.

 

Combine red onion, lime juice, garlic and hot sauce in a medium bowl. Add

p=epper mixture from food processor. Mix well. Serve with grilled vegetables,=

fish or chicken.

 

Makes about 2 cups.

Ingredients

3 cups apples, peeled

16 ounces cranberry sauce

3/4 cup walnuts, chopped

1/4 cup sugar

1/4 cup flour

1 teaspoon cinnamon, ground

2 unbaked pie shells

 

 

 

Directions

Preheat oven to 375 degrees.

 

In a large bowl combine peeled apples, cranberry sauce, chopped walnuts, su=gar,

flour, and cinnamon; toss until coated evenly.

 

Pour into a 9 " unbaked pie shell and top with 1 pie shell dough rolled= to 1/8 "

thick. Flute the edge and cut slits in the top crust. Place o=n a baking sheet

and bake for 40 to 45 minutes, or until lightly browned.
