Guest guest Posted October 13, 2001 Report Share Posted October 13, 2001 Hi everyone, We just received a windfall of fresh garden veggies from the farm, and I am now looking for some creative ideas for serving/freezing/casseroles, etc. to use them all up. We have 40lbs of potatoes, 20 lbs of carrots, big and baby, 2 huge zuchinnis', 2 spaghetti squash, and lots of beets. Even giving some away to both our kids, we still have lots of veggies. I want to make some creative casseroles with veggies, and even TVP. so any suggestions and recipes would be most welcome.
