I love to put some chopped jalepino's in it or a little salsa, and serve it warm as a dip with tortilla chips. Melty Cheese 1/2 c. cashews 2 T. cornstarch 4 oz. pimentos 1 1/2. salt 2 T. lemon juice 1 c. water 1 T. nutritional yeast flakes 1/4 c. oat flour ground 1 t. onion powder Blend well. Add 1 1/2 c. boiling water and cook until thick. Serve warm over haystacks or chips. Now, I will tell you how I have altered this recipe. I usually cut the cashews in half...(less fat) I ALWAYS use sweet red pepper instead of pimentos as I like the flavor better. Fresh lemon juice is more tasty. You may want to alter the amount of salt in this recipe to your taste. You may want to add a few drops of butter flavoring to give it more of a dairy taste. Hint: Buy sweet red peppers when on sale. Quarter them and remove seeds. Freeze in baggies and just take out what you need. I usually use more sweet red pepper than the 4 oz. it calls for.
