Pimento Cheese Brick

This is my favorite cheese. It sets up VERY quickly.. and has a

wonderful flavor. Put it in a mold, and you can slice it after it is

chilled.

I use red bell pepper instead of the Pimento. Also the agar agar is

MUCH cheaper in an oriental store than a health food store. I paid $6.00

per ounce in a health food store, and $1.00 in an oriental store.

 

Pimento Cheese brick

 

1 1/2 cups water

5TBS Agar Flakes (or 5 tsp. agar powder)

3/4 cup cashew pieces

2 Tbs. sesame seeds

1 1/4 tsp salt

2 tsp onion powder

1/4 cup nutritional yeast flakes

1/2 cup pimentos ( or red pepper)

2 1/2 tbs. lemon juice

Put first two ingredients into small sauce pan and bring to boil. Reduce

heat to medium and simmer for 5 min., stirring frequently. Place

remaining ingredients in blender. Add agar mixture when cooked. Blend

all ingredients on high 1-2 minutes until creamy, stopping blender once

or twice to stir contents. pour into mold and chill over night. FOR

SAUCE: leave out agar. makes a wonderful sauce for baked potatos and

veggies

VARIATIONS: to make different flavours, fold in one of the folllowing

before pouring cheese into mold:

1) olive- 3/4 finely chopped olives

2) Toasted Sesame- 2 TBS tasted sesame seeds

3) Caraway- 1 1/2 TBS caraway seeds

4) Dill- 2 TBS dill weed powder

5) onion-Dill- 1 TBS onion flakes and 2 1/4 tsp dill seed or

dill weed

(6) Chopped jalepino's (my favorite)

(7) 1 tsp. butter flavoring ( for a more " dairy " taste)
