Guest guest Posted October 5, 2001 Report Share Posted October 5, 2001 APPLE CINNAMON CAKE 3 eggs 1 1/4 cups sugar 2/3 cup milk 5 oz butter or margarine good 1 3/4 cups flour 2 tsp baking powder 3 firm, tart apples 1 1/2 tsp cinnamon 3 tbs sugar Beat eggs and sugar white and fluffy. Heat the milk and melt the fat in it, then beat the milk mixture into the egg batter. Add flour mixed with baking powder. Pour in a round, greased, floured baking dish, capacity 6 - 8 cups. Peel and finely dice the apples and mix them with cinnamon and sugar. Sprinkle the apples over the batter and bake at 400F for 25 - 30 minutes or until nicely colored and done. Enjoy!
