recipe for vegan marshmallows

this might be a bit time consuming for 'quick

vegetarians' but as far as i know NOBODY makes vegan

marshmallows anymore, quite the shame..the following

recipe is from the fatfree.com archives. i'm not even

going to fib and say i've tried it, because i haven't.

>_Marshmallows_ Makes about 1 3/4 lbs.

>Put in the mixing bowl and let stand 1 hour:

>3 tablespoons kosher veg gelatin (this is 3 packets

of Emes)

>1/2 cup water

>In about 1/2 hour, begin to prepare a syrup. Place

in a heavy pan over low

>2 cups unbleached sugar

>3/4 cup light corn syrup

>1/2 cup water

>1/4 teaspoon salt

minutes to allow any

Kosher gelatin is *not* vegan. It is made from *kosher*

animals. There are non-animal gelatin substitutes, such as agar, but I

don't know if they can be used to make marshmallows.
