Guest guest Posted September 30, 2001 Report Share Posted September 30, 2001 SPINACH AND GROUNDNUTS Various other greens - pumpkin, bean, sweet potato, and cassava leaves - are prepared the same way as spinach. 1 10-ounce package frozen spinach, thawed and drained 1 cup chopped onions 1 tablespoon oil ¼ cup chopped unsalted peanuts Cook spinach in 1 tablespoon water until tender. In a heavy stewing pan, fry onions in oil until golden. Add onions to spinach with peanuts and 2 tablespoons water; mix well. Bring to boiling then simmer several minutes to blend flavors.
