Guest guest Posted September 30, 2001 Report Share Posted September 30, 2001 SPINACH AND GROUNDNUT STEW 1 onion, chopped 1 chili pepper, chopped 1 tablespoon oil ½ cup finely ground unsalted peanuts 1 cup coconut milk 1 10-ounce package frozen chopped spinach, thawed and drained salt to taste In a heavy stewing pan, sauté onions and chili pepper in oil until onion is transparent. Add peanuts and coconut milk, slowly, stirring constantly until mixture comes to a boil. Add spinach and salt to taste. Reduce heat and simmer 15 minutes or until spinach is cooked. Variation : Without the nuts and coconut milk, this becomes Braised Spinach. Cook and drain spinach. Sauté onion and chili in oil until onion is golden. Add cooked spinach and 1 teaspoon salt and sauté several minutes, stirring well.
