Guest guest Posted September 26, 2001 Report Share Posted September 26, 2001 Tofu Medley Casserole Ingredients: 1 fried tofu - cut into small cubes 2 Tbsp veg. oil 1 cup wild rice mix or 1 box wild rice mix 2 carrots diced 1 med onion diced 3 stalks celery diced 1 can condensed mushroom soup 1/4 cup toasted walnuts chopped croutons 1 tsp dried dill 1 tsp rosemary crushed 1 1/2 cloves garlic salt pepper to taste Directions: Put 2 tablespoons oil in large frying pan. Add tofu,onion,celery,carrot,seasonings and saute until veggies are tender. At the same time cook your rice until done. In a bowl add rice, tofu mixture, walnuts and mushroom soup. Place in a casserole dish and top with crushed croutons. Bake at 350 for 40 minutes or until bubbly on top.
