I'm Lea, I live in England (so I will try to keep recipes uncomplicated and try not to use too many of our measures! ) I've been vegetarian for about 11 years now.. and have finally decided it's time to try some new recipes, the quicker to cook, the better! Here's one that takes about 30-40 mins, but it's very yummy! Regards, Lea. Vegetable Tacos 1 Red onion (peeled and diced) 1 x 400g tin chopped tomatoes 125g (4oz) mushrooms (sliced) 1 stick celery (trimmed and thinly sliced) 1 tsp cumin 1 tsp crushed coriander seed (optional) ½ tsp chilli sauce (acc. to taste) 1 x small tin (190g) sweet corn drained 1 large tin (400g) kidney beans (drained) 8 taco shells 80g (3oz) cheese, grated Place the onion, tomatoes and mushrooms into a pan. Cover and cook on a low heat for 10 mins. Add the celery and spices and cook on a medium setting for 10 mins. Add the sweet corn and kidney beans and cook uncovered for 10 mins.
