I fixed it last weekend for breakfast and I thought it was delish! It ain't the real mccoy when it comes to scrambled eggs, but it's still good, if you're one for tofu. :-) Since it's just me, I just halved the recipe, & it still yields some decent sized portions. Megan PEPPERS & TOFU SCRAMBLER Preparation time: 10 minutes Cooking Time: 10 minutes Yield: 4 servings 2 T. olive oil 1 medium onion, chopped 2 t. minced garlic 2 c. bell pepper strips (1 c. is about one normal-size bell pepper, any color of bell pepper will do, but i find the nicest contrast with red ones) 2-12 oz bricks firm tofu 1/2 t. black pepper 1 t. tumeric (this gives the tofu a yellow color reminiscent of scrambled eggs) 1 T. soy sauce salt to taste 1) Heat the olive oil in a large skillet. Over medium heat, cook onion, garlic, & bell peppers in the oil, stirring occasionally, until the onions are transluscent and the peppers are soft, about 8 minutes. 2) Crumble the tofu into the onion-bell pepper mixture. Add the black pepper, tumeric, and soy sauce & mix everything together wiht a wooden spoon or spatula. Heat thoroughly, mixing & scrambling the ingredients continuously, about 2 minutes.
