Tomato Potato soup....cover with water and cook potatoes until tender reserving the cooking liquid, add in a can of diced tomatoes, salt and pepper to taste and thicken just a bit with your favorite method. (I use cornstarch and milk) You can adjust your potatoes and tomatoes to fit your needs. It usually is ready with in about 30 minutes if I don't make a real big batch. Nice filling, light meal there & that's another way of getting protein.
