Vegetarian Chili (Wheat)

My first recipe posting, I hope you like it! Our family is just

beginning this Vegetarian thing so please don't be offended by some

of the ingredients.

 

Vegetarian Chili

 

1 C Whole uncooked wheat (berries?)

3 C Water

2 cubes vegetable bouillon

1 28oz can of diced tomatoes (with herbs)

1 14 oz can of tomato sauce

3 19 oz cans of kidney beans (or pink)

1 pouch of Old El Paso Chili mix

1 small can of corn (optional)

 

Cook wheat in water and vegetable bouillon until all the water is

absorbed. Add chili mix, diced tomatoes, and tomato sauce. Cook

over medium heat for 10 minutes, stirring occasionally.

 

Add beans (rinsed and drained) and serve.

 

Serves 6

 

(we top the whole thing off with choped onions and shredded cheese, I

don't see any reason why you couldn't do the same with vegan cheese!)
