Curried Chicken Salad

 

1/4 cup mayonnaise

1/2 cup plain yogurt

Juice of one lemon

1 stalk of celery, diced

2 scallions, sliced thin, including some green

1/2 cup chopped fresh chives

1 tart apple, diced

1/2 cup dried currants soaked for 15 minutes in warm water

1/2 cup diced mixed fruit or apricots

2 cups cubed tofu marinated in your choice dressing

2 tablespoons Garam Masala

1/2 to 1/2 teaspoons crushed red pepper flakes

2 cups uncooked macaroni

salt and freshly ground pepper to taste

serves 4 to 6

 

In a large mixing bowl, combine mayonnaise, yogurt, and lemon juice. Add celery, scallions, chives, apples, drained currants, dried fruit, tofu, garam masala, and red pepper flakes. Mix well.

Cook macaroni to al dente stage, drain, and cool before adding to mixture in the bowl. Mix well and add slat and pepper to taste. Chill overnight.
