I started following a recipe from the Moosewood Cookbook, but made my own variation of the Cauliflower Maranca. Heavenly Cauliflower 1 head cauliflower, cut into florets 1/2 each green and red pepper, sliced into chunks 25-30 mushrooms, sliced 1 large onion, sliced 2 cups bulgar 4 cups of veggie broth 2 1/2 cups grated cheddar cheese 1 lb tofu, frozen and thawed, then sliced 2-3 cloves garlic, chopped 1/4 cup olive oil Heat olive oil in pan, add garlic and stir quickly, add tofu slices and cook till brown on both sides. Remove tofu to plate, and add all the veggies except the onion to the pan. stirring to coat all with the oil and garlic. Reduce heat to low, cover pan with lid and let veggies soften. Cook bulgar and onion in the veggie broth till done. Combine all ingredients in a casserole dish, cover with lid or saran and cook in microwave for 15 minutes till heated through.
