I got it out of Easy Vegetarian dinners. SWEET & SPICY SPRING ROLLS Makes 6 springs rolls 6 8-inch round rice papers 2 teaspoons grated fresh ginger 1 to 2 teaspoons wasabi paste 1 teaspoon lime juice 1/3 cup light mayonnaise dressing or soy maynonnaise 2 cups packaged shredded broccoli ( broccoli slaw mix) 1/2 of a 10 1/2 ounce package extra-firm tofu, drained and finely chopped (1 cup) 1/4 cup flaked coconut 6 romaine lettuce leaves dipping sauce Carefully dip each rice paper quickly in water and place between paper towels or clean cotton dish towels. Let stand for 10 min. Meanwhile , in a small bowl combine the ginger,wasabi paste,and lime juice. Stir in mayonnaise dressing. In a large bowl toss together the shredded broccoli, tofu, and coconut. Add ginger mixture; toss to coat. Line each rice paper with lettuce leaf. Spoon broccoli mixture over lettuce. Wrap rice paper around broccoli mixture. Serve with the dipping sauce. DIPPING SAUCE Stir together 1 tablespoon soy sauce, 1 tablespoon lime juice, and 1/4 teaspoon crushed red pepper. Time 25 to 30 min Quote Link to comment Share on other sites More sharing options...
