Guest guest Posted August 15, 2001 Report Share Posted August 15, 2001 Tempeh with Cashews Ingredients:1 bundle green onions2 Tbsp tomatoe puree1/2 cup cashew nuts1 1/2 tsp garam masala1 garlic clove minced1 tsp chili powder1 Tbsp lemon juice1/4 tsp tumeric1 tsp salt1 Tbsp plain yogurt1 Tbsp vegetable oil1 Tbsp chopped cilantro1 lb Tempeh, diced into cubes (2-8oz packages)1 1/4 cup waterInstructions: Cube the tempeh and place the cubes in a bowl of water with 1 tsp salt.Chop the onions and place them into a blender or food processor.Add the tomato puree, cashews, garam masala, chili powder, garlic, lemon juice, tumeric, salt and yogurt to the onions.Heat the oil in a large saucepan and fry the spice mixture over medium-low for 2 minutes.Pour the water off the tempeh and place tempeh on a paper towel to dry.Add the cilantro and tempeh to the spice mix and stirfry for 1 more minute.Pour in the water and bring to a simmer. Cover the pan and cook on low heat for 10 minutes.After the 10 minutes, tempeh should be done and sauce should be thick, if not cook for 5-10 minutes longer.Sprinle with cilantro and a few cashew nuts for garnish.Makes 6 servings Prep time: 15 minutes Cook time: 15-20 minutes Quote Link to comment Share on other sites More sharing options...
