Guest guest Posted August 13, 2001 Report Share Posted August 13, 2001 Red Bell Pepper Sauce Roast and skin 4 red bell peppers. Process until the consistancy of tomato sauce. Saute a small onion and a clove of garlic in olive oil. Pour in the bell pepper sauce. Add basil and oregano. I add in sliced vegetables (whatever I have around, zucchini, summer squash, carrots, etc.) Simmer about 20 minutes. I add lemon juice to taste (and if you want it to be more like commercial sauce in a jar, add a bit of maple syrup). Zucchini Sauce Sauté a medium onion and one or two cloves of garlic in olive oil Slice about 5 zucchinis into thin slices and add to onion and garlic. Add fresh or dried basil and oregano and continue to cook until zucchini is soft. Let it cool a bit, then process until it is the consistency of tomato sauce. Add lemon juice to taste. If your eyes are closed, you will swear it's tomato sauce! To make it like ketchup, I let it cook longer so it's thicker, add more basil and oregano, then add a little maple syrup before the lemon juice. Thank goodness they came up with green ketchup.
