Guest guest Posted August 11, 2001 Report Share Posted August 11, 2001 ()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()()() Pastitsio 023 cups cooked penne or elbow2 eggs lightly beaten(or egg replacer)1/3 cup parmesan cheese ( I use vegetarian)1 1/2 cups meat substitute ( I use one bag Green Giant Crumbles)2 cup sliced mushrooms1 cup chopped onions1 3/4 cup tomato sauce1 tsp garlic powder1 tsp each oregano and basil1/4 tsp salt1.4 tsp pepper1/8 tsp cinnamon1/3 cup margarine(I use olive oil)1/3 cup flour1/4 tsp salt1/4 tsp nutmeg2 cups soy milk mixed with 1 cup water or vegetable stock2 eggs lightly beaten( or egg replacer)1/3 cup grated parmesan cheeseCombine macaroni, eggs and cheese and spread in a greased 9x13"pan. Set aside.Brown mushrooms and onions until tender, and add meat crumbles. Stirin tomato sauce and seasonings. Simmer uncovered while preparingtopping.Melt margarine in a large saucepan. Stir in flour, salt and nutmeg.Add milk slowly and cook while stirring until thickened and bubbly. Stirthis mixture into beaten eggs and return to saucepan. Cook 1 minutemore.Spread meat filling over macaroni. Spread topping over all andsprinkle with parmesan cheese. Bake in pre-heated oven at 350Ffor 35-40 minutes until golden brown and bubbly.
