Ingredients: for the bacon: eight strips of thinly sliced extra firm organic tofu, sliced long. liquid smoke oil salt or tamari brewers yeast (optional) sandwich makings: good quality sliced bread, four slices toasted. nayonaise thin slices of tomato lettuce Directions: Fry the tofu strips in a non stick pan with a few drops of oil until browned on both sides. The strips will become baconlike in the pan...hard and crispy. Drizzle each piece with a drop of liquid smoke and salt or tamari. Turn over and drizzle the other side, then turn over again. You can sprinkle with brewers yeast at this point, but it's not necessary. It adds flavor, but watch out for the farts. They're sulferous!! While the tofu is frying, cover each slice of toast with nayonaise, place lettuce and tomato on two slices. Put four tofu bacon slices on each sandwich base and cover with the other toast slices.
