Guest guest Posted August 10, 2001 Report Share Posted August 10, 2001 Aloo Phujia 2 onions, chopped 1/2 + 1/8 cup vegetable oil 2 1/2 pounds potatoes, peeled and cubed 2 1/2 teaspoons salt1 scant teaspoon cayenne pepper1 scant teaspoon ground turmeric1/2 scant teaspoon cumin4 tomatoes, chopped DirectionsLightly brown onion in oil in a medium size skillet.Stir in salt, cayenne, turmeric and cumin. Add potatoes and cook 10 minutes stirring occasionally.Add tomatoes, cover pan and cook until potatoes are soft, about 10 minutes. Enjoy!
