Guest guest Posted August 7, 2001 Report Share Posted August 7, 2001 Beet and Orange Saladmakes 6 servings3 tablespoons vegetable oil3 tablespoons cider vinegar1 teaspoon sugar1/4 teaspoon ground cumin16 oz can sliced beets, cut into halves or quarters, drained or fresh cubed.1/4 cup chopped red onion2 large oranges, peeled and sectionedlettuce leavesIn medium bowl combine oil, vinegar, sugar and cumin. Add beatsand onion, toss gently to coat. Cover, chill to blend flavors. Withslotted spoon, remove beets and onion from marinade. Arrange withoranges on lettuce-lined platter.
