Falafel

Amount Measure Ingredient -- Preparation Method

1 can garbanzo beans -- (16 oz)

rinsed and drained

1/2 teaspoon garlic powder

1/2 teaspoon cumin

salt and pepper to taste

1 egg white

1 tablespoon oil

1 tablespoon soy sauce

1 tablespoon lemon juice

1 tablespoon sesame seeds

3 tablespoons wheat germ -- or bread crumbs

 

Mix all but wheat germ and mash with potato masher. Roll into 16

one-ince

balls. Roll each ball in wheat germ. Bake in non-stick baking pan for

20

minutes at 375 degrees. Serve 4 falafel balls in one-ounce pita bread

with

tomato, cucumber, and lettuce. Top with plain yogurt or nonfat sour

cream
