Guest guest Posted August 3, 2001 Report Share Posted August 3, 2001 Roast and skin 4 red bell peppers. Process until the consistancy of tomato sauce. Saute a small onion and a clove of garlic in olive oil. Pour in the bell pepper sauce. Add basil and oregano. I add in sliced vegetables (whatever I have around, zucchini, summer squash, carrots, etc.) Simmer about 20 minutes. I add lemon juice to taste (and if you want it to be more like commercial sauce in a jar, add a bit of maple syrup). Quote Link to comment Share on other sites More sharing options...
