Beef-Style Burgundy Stew

Ingredients for TVP Preparation

2 cups TVP beef style chunks

2 cups red wine

2 Tablespoons olive oil

1 teaspoon pepper

1/2 teaspoon ground thyme

1 bay leaf

2 teaspoons vegetarian beef flavored broth powder or equivalent

1 Cup water

 

Remaining Ingredients

3 garlic cloves finely minced

2 carrots sliced

2 medium onions finely minced

1/4 cup all purpose flour

1 Tablespoon tomato paste

1 1/2 cups pearl onions

2 ounces mushrooms, sliced

12 1/2 onces canned tomatoes

2 Tablespoons olive oil

2 teaspoons honey

4 teaspoons vegetarian beef flavored broth powder or equivalent

 

Preheat oven to 350. In a mixing bowl, combine wine, olive oil, pepper,

thyme, and bay leaf. Add one cup of wine mixture to one cup water.(set

remainder mixture of wine mixture aside).Bring water mixture to a boil.

Add 2 teaspoons vegetarian beef flavored broth and TVP. Stir well and

remove from heat. Leave TVP in marinade for 10 minutes. Drain excess

marinade from TVP. and add to wine mixture previously set aside. Place

TVP in large casserole dish.

Finely chop onions, slice carrots, and mince garlic. Saute them in the

2 Tablespoons olive oil about 5 minutes. Blend in flour and stir about 1

minute. Add remaining marinade, and the 4 teaspoons vegetarian beef

powder and tomato paste. Stir mixture until it comes to a boil and pour

over TVP. Cover and Bake in oven for 45 minutes.
