Guest guest Posted August 2, 2001 Report Share Posted August 2, 2001 Amaretto " chicken " Category: Entrees Yield: 4 servings 4 slices extra firm tofu drained and patted dry 3 tbsp Flour 1 1/2 tsp Salt 1 1/2 tsp Ground Pepper 2 tsp Paprika 3 tbsp Olive Oil 1 1/2 tbsp Dijon Mustard 1 can 6 ¼ oz Frozen Orange Juice 1 cup Amaretto Procedures Mix the can of frozen orange juice with a half can of water. Preheat oven to 350 degrees. Combine flour, salt, pepper, paprika and garlic salt. Coat tofu with this mixture. Heat oil (medium heat) in skillet and saute tofu until brown. Remove and put in casserole. To skillet, add mustard, orange juice and amaretto. Increase heat and boil, stirring constantly, until thick. Pour sauce over tofu and bake, covered, for 20 minutes.
