Guest guest Posted August 2, 2001 Report Share Posted August 2, 2001 Vegetarian Casserole 2 med. carrots 1 C. fresh mushrooms 1 can black beans 8 oz. corn, fresh or frozen 1/4 C. bulger 1/4 t. garlic salt, powder, or whole garlic 1/2 C. pearl barley 1/2 chopped onion 1/2 C. chopped parsley 1 1/2 C. vegtable broth 1/2 C. shredded cheese Heat oven to 350°F. Mix everything except cheese together. Pour in 9x13 " pan. Bake for 1 hr., stir, sprinkle cheese on top, and bake for 15 min. more. If the liquid goes away add more. Makes 6 servings.
