then thaw to use in muffins and other baked goods. You'll need to eliminate

some of the water in the recipe, too.

 

You can always try freezing chopped zucchini, too. After all, frozen

butternut is available, right?

Hi, Yes it can. you can cut it put in slices, then put it a good plastic

bag, then freeze it, I only freeze it for one year. My mom used to

freeze it all the time, when she had a garden.

I have a good recipe with zucchini and corn ,and green chile ( if you

have chile), and if you can have cheese, but one does not have to put

cheese in the dish, . My mom made this for us, it is called calabacitas

in Spanish.

Jenn, I have frozen all kinds of squash, including Zucchini. I don't

blanch, I just slice and put in plastic bags. I try to make it one

or 2 serving size packs, so if I need some for a recipe ingredient I

can usually just use a one serving sized pack. Some people blanch

but I have found this not to be necessary, it doesn't get tough in

the freezer. My sister uses a water pack, just freezes the veggie in

water and that is okay too, but more work and takes more space in

freezer. Hope this helps you. Dottie
