Guest guest Posted August 2, 2001 Report Share Posted August 2, 2001 Spinach/Artichoke Pasta 1 lb. curly pasta, cooked Including the water from canned artichokes, pulse the following ingredients in food processor until you have pesto: 1 lb. spinach leaves (I buy the baby leaves already washed & bagged) 1 can artichoke hearts, packed in water 1/3 cup balsamic vinegar - more as needed to make pesto loose enough to toss with pasta. 3-4 cloves garlic, or to taste salt & fresh black pepper 4-8 black olives, pitted (optional) Toss pesto with pasta. I often add diced yellow & red peppers, spring onions and de-seeded cucumbers. Grated carrots add a nice sweetness as well. For non-vegans, feta cheese is a nice addition. Refrigerate. I am trying really hard to be more healthier, but when you have people that put down people that choose to eat meat or who are trying to be heathier or who are trying to raise their children differnt with their eating habits, then that shows me that there is ignorance in people....... I joined this list to try to make my children healthier growing up...and al so because my 19 yo chooses to be veg and a pagan and even no that I am not I respect her and her ways..... I'm talking about the rest of the population who DO, and that's probably the majority. It's impossible not to know people like that, they're all around us. It has nothing to do with who's better than who. That's not even the point. The point is that people choose to be ignorant so they can stay in their little world without guilt or change. They don't want to hear reality but it upsets their perception of things & forces them to acknowledge reality, which in turn forces them to change, which takes effort. And all of this probably doesn't even apply to anyone on this list or we wouldn't be here. If I'm not being understood by now, I give up.
