Guest guest Posted July 30, 2001 Report Share Posted July 30, 2001 Vegan Mashed Eggplant 1 large, oval-shaped eggplant 1/2 cup chopped onions 1/2 cup chopped tomatoes 1 small chopped green chili 1/2 tablespoon cooking oil 1/3 teaspoon cumin seeds 1/4 teaspoon red chili Salt to taste Roast the eggplant over direct fire (gas stove or grill) until the skin is completely charred. Once the eggplant has cooled, remove the skin. Mash the eggplant finely by hand. Heat oil in a pan and add cumin seeds. Fry onions till golden brown, then add green chili and tomatoes. Fry them together for 1 minute. Now add red chili and salt to it, then add mashed eggplant. Mix and keep on flame for 1 minute. Garnish with finely chopped cilantro and serve hot.
