Guest guest Posted July 28, 2001 Report Share Posted July 28, 2001 Tempeh Herb Sandwiches 8 oz. tempeh, cut into 1-inch squares and steamed 1 tsp. vegetable oil 2 Tbsp. Eggless Mayonnaise 2 Tbsp. soy sauce or tamari 1 Tbsp. minced onion 2 Tbsp. dried parsley 1/4 cup minced red bell pepper 1/4 cup minced celery 1/8 tsp. cayenne pepper 6-8 slices wheat bread Lettuce Sprouts To steam the tempeh: Bring a medium-sized pot of water to a boil. Reduce the heat to low, add the tempeh, and simmer for 15 minutes. Drain well. Heat the oil in a skillet over medium-high heat and add the tempeh. Sauté for 5 minutes, stirring often. Transfer the tempeh to a bowl and add the mayonnaise, soy sauce or tamari, onion, parsley, red pepper, celery, and cayenne pepper. Mash the mixture well.
