Tempeh Herb Sandwiches

 

8 oz. tempeh, cut into 1-inch squares and steamed

1 tsp. vegetable oil

2 Tbsp. Eggless Mayonnaise

2 Tbsp. soy sauce or tamari

1 Tbsp. minced onion

2 Tbsp. dried parsley

1/4 cup minced red bell pepper

1/4 cup minced celery

1/8 tsp. cayenne pepper

6-8 slices wheat bread

Lettuce

Sprouts

 

To steam the tempeh: Bring a medium-sized pot of water to a boil.

Reduce the heat to low, add the tempeh, and simmer for 15 minutes.

Drain well.

Heat the oil in a skillet over medium-high heat and add the tempeh.

Sauté for 5 minutes, stirring often. Transfer the tempeh to a bowl and

add the mayonnaise, soy sauce or tamari, onion, parsley, red pepper,

celery, and cayenne pepper. Mash the mixture well.

Spread the tempeh mixture on slices of bread and add lettuce and

sprouts.

Makes 3 to 4 sandwiches.
