With as many recipes as I read every day, I could unknowingly be plagiarizing another recipe author. If so, I apologize in advance. Anyway, it was a hit last night so I thought I'd share it with you. It took me about twenty minutes to half an hour to prepare, ten minutes to bake. Tortilla Pizza 2 large tortilla shells 1 can refried beans 2-3 limes 1/2 tsp soy sauce 1 can tomato paste 1 tsp cilantro opt: a few drops Tabasco sauce 2 Roma tomatoes 10 olives, sliced 10 mushrooms, halved a few spears broccoli 1 orange pepper, cup up lots of cheese In a pan, heat the refried beans, the juice of half a lime, and soy sauce. Allow to cool a bit, then spread the beans in a thin layer on the tortillas. In a bowl, mix the tomato paste, juice of half a lime, and the cilantro together. Add a dash of garlic if you like. Spread this in a thin layer over the refried beans. If the beans are still warm and runny, get the veggies ready before spreading the tomato sauce. You don't want the two to mix together too much. Slice olives, chop tomatoes, etc. Put whatever you like on pizza on this, just make sure it's piled high! When finished, top with a Mexican blend of cheeses. Place in a 350 degree oven for about ten minutes, or until the cheese is melted. To serve, put sour cream, salsa, and lime tortilla chips on the side.
