Guest guest Posted July 24, 2001 Report Share Posted July 24, 2001 Citrus Punch@@@@@ Fresh Corn Salad salads, vegetables 3 cup. cooked corn kernels (about 6 med. ears) ½ cup. diced red bell pepper ¼ cup. minced green onion, inc. tops ¾ cup. chopped basil (* note) 1 cup. good mayonnaise - plus (not Miracle Whip) salt freshly ground black pepper In medium-sized bowl, combine corn, pepper, onion and basil; toss well Stir in mayonnaise; season with salt and pepper to taste. Note: you can use cilantro or any favorite herb, or a combination or herbs, but they should be fresh.
