Guest guest Posted July 24, 2001 Report Share Posted July 24, 2001 Citrus Punch@@@@@ Baked New Potatoes and Yellow Peppers vegetables 20 each medium new potatoes, cut into bite-sized pieces 6 yellow bell peppers, quartered, seeded 1 cup. extra virgin olive oil 1 tablespoon. sesame oil coarse salt 1/2 cup. finely chopped parsley Preheat oven to 400F. Place potato pieces in roasting pan. Place pepper slices, cut side up, in a second pan. Combine oils; drizzle half over potatoes and half over the peppers. Sprinkle with coarse salt. Roast potatoes for 30-35 minutes; roast peppers for 20-25 minutes, or until tender. Arrange potatoes and peppers on a platter, sprinkle with parsley and serve. Yield: Makes 12 servings.
