Guest guest
I LOVE Miso Soup and it is a great way to use Tofu. I don't really measure anything but just throw in cubed extra-firm Tofu, chopped green onions, bean sprouts, and sliced mushrooms into about 4 cups of water or veggie broth. Bring to a boil so the veggies are tender-crisp. When I spoon it into bowls, I add about 1 tsp to 1 Tbsp. of Miso with a fork to just the broth until it is blended, and then add the veggies. Oh, you can add chowmein noodles to the soup too if you want. I have also been known to add wontons to the soup - I've used shrimp in the past ( when I was a fish eater) but you could probably find or make veggie wontons too.
