Bean and Cheese Burritos

8 fat-free flour tortillas (6 to

8 inches in

diameter)

1/3 cup finely chopped onion

1/3 cup finely chopped green bell

pepper

1 (16-ounce) can fat-free refried beans

1 1/4 cups taco sauce

1 cup shredded reduced-fat Cheddar

cheese -- (4

ounces)

 

CHOICE OF TOPPINGS

shredded lettuce, chopped

tomatoes,

chopped ripe olives, plain

low-fat or

fat-free yogurt and/or

reduced-fat sour

cream -- if desired

 

 

 

 

 

Heat tortillas as directed on package. While tortillas

are heating,

spray

10-inch nonstick skillet with cooking spray; heat over

medium heat.

Cook

onion and bell pepper in skillet about 5 minutes,

stirring frequently,

until

vegetables are tender. Stir in refried beans and 1/4

cup of the taco

sauce;

heat through.

 

Heat remaining 1 cup taco sauce in 1-quart saucepan

over medium heat

about 2

minutes, stirring occasionally, until heated through.

Remove from heat;

cover

to keep warm.

 

Place about 1/3 cup of bean mixture on center of each

tortilla. Fold

one end

of tortilla up about 1 inch over filling; fold right

and left sides

over

folded end, overlapping. Fold remaining end down.

 

Spoon warm taco sauce over burritos. Sprinkle with

cheese. Serve with

choice

of toppings. (toppings not included in nutritional

values!)
