Guest guest Posted July 23, 2001 Report Share Posted July 23, 2001 SandyK <healthy-recipes > * Exported from MasterCook * Bean and Cheese Burritos Recipe By : Serving Size : 4 Preparation Time :0:10 Categories : Economical High-Fiber Low-Cholesterol Low-Fat Meatless Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 fat-free flour tortillas (6 to 8 inches in diameter) 1/3 cup finely chopped onion 1/3 cup finely chopped green bell pepper 1 (16-ounce) can fat-free refried beans 1 1/4 cups taco sauce 1 cup shredded reduced-fat Cheddar cheese -- (4 ounces) CHOICE OF TOPPINGS shredded lettuce, chopped tomatoes, chopped ripe olives, plain low-fat or fat-free yogurt and/or reduced-fat sour cream -- if desired Heat tortillas as directed on package. While tortillas are heating, spray 10-inch nonstick skillet with cooking spray; heat over medium heat. Cook onion and bell pepper in skillet about 5 minutes, stirring frequently, until vegetables are tender. Stir in refried beans and 1/4 cup of the taco sauce; heat through. Heat remaining 1 cup taco sauce in 1-quart saucepan over medium heat about 2 minutes, stirring occasionally, until heated through. Remove from heat; cover to keep warm. Place about 1/3 cup of bean mixture on center of each tortilla. Fold one end of tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold remaining end down. Spoon warm taco sauce over burritos. Sprinkle with cheese. Serve with choice of toppings.
