Guest guest Posted July 22, 2001 Report Share Posted July 22, 2001 I hated cooking and I'm not that organized, so upon becoming vegetarian I printed a bunch of recipes from this group that sounded like something I might want to try. Then each week before grocery shopping, I pick about 5 recipes from the pile I've been collecting and buy the ingredients to make them. Then every morning I decide which of the recipes I want to make in case something needs to be marinated or put into the crock pot. In a pinch, I always have pasta, canned beans, rice, frozen veggies, etc around to throw something boring together! I don't post recipes here often because I tend to not measure things and use whatever ingredients I have handy when a try new recipe, but here is one: 2 medium zucchinis (halved lengthwise), 1/2 chopped onion (optional), 1 tsp finely minced garlic (a jar of this is always in my fridge), 1 cup of your favorite shredded cheese, 1/2 cup cornbread stuffing mix, 1 egg (lightly beaten), 1 tsp chopped parsley, your favorite seasoning to taste, 1/3 cup parm or asiago cheese Scoop pulp from zucchini and chop in micro-safe bowl. Add onion and garlic. Microwave on high 4 minutes. Pour off any liquid. Stir in shredded cheese, stuffing mix, egg, parsley and seasonings. Arrange zucchini shells in 12-inch round glass baking dish. Fill each shell with mixture. Sprinkle with parm or asiago. Cover with plastic wrap (I use a paper plate to avoid microwaving plastic). Microwave on high 6-8 minutes, turning dish once during cooking. I just make rice, frozen or steamed veggies, and bread to make a yummy and relatively easy meal.
