Guest guest Posted July 22, 2001 Report Share Posted July 22, 2001 Vegan, Low-Fat Vegetable Soup With Lentils 1 c. lentils 6 c vegetable stock 3 cs. chopped fresh mushrooms 2 celery, chopped 1 large potato, diced 1 onion, chopped 1 large carrot, chopped 1 large green bell pepper, chopped 2 tbsps. fresh lemon juice 3 large garlic cloves, minced 2 bay leaves 1/4 c. minced fresh parsley 1/2 tsp. savory 1/2 tsp. thyme 1/2 tsp. oregano salt and pepper to taste Bring to a boil in a large saucepan the vegetable broth and the lentils. Then add the rest of the ingredients. reduce heat and simmer for one hour. Before serving, remove the bay leaves and puree half the mixture in blender and add to rest of soup to thicken.
