Guest guest Posted July 22, 2001 Report Share Posted July 22, 2001 Vegetarian Barley-Vegetable Soup 2 medium onions, peeled & diced 1/2 tsp. dried thyme 2 large carrots, scraped & diced 2 tsps. salt 2 stalks celery, chopped 1/4 tsp. pepper 3 tbsps. butter or margarine 1 c. pearl barley 1 can tomatoes, chopped-1 lb 12 ozs. 2 cs. frozen green beans or peas or combined 8 cs. water 1 tbsp. chopped fresh dill 1 tsp. dried basil Saute onions, carrots, and celery in heated butter or margarine in a large kettle for 5 minutes. Add tomatoes, water, basil, thyme, salt, and pepper. Bring to a boil. Stir in barley and lower heat. Cook slowly, covered, 1 1/2 hours, until barley is tender.
