Guest guest Posted July 21, 2001 Report Share Posted July 21, 2001 Vegetarian Low-Fat Sauteed Spinach With Garlic 1 tbsp. olive oil 2 garlic cloves, minced 1 lb. baby spinach salt and pepper to taste Heat oil over medium-high heat in large heavy skillet. Add garlic and cook, stirring, about 10 seconds. Add spinach in batches, adding more as spinach softens and cooks down. Cook, stirring constantly, until wilted and just cooked, about 4 minutes. Sprinkle with salt to taste and serve hot. Makes 4 servings. Calories...57...Fat...3 g...Protein...3 g...Carbs...4 g...Sodium...680 mg...Fiber...1.3 g.
