Guest guest Posted July 20, 2001 Report Share Posted July 20, 2001 Vegetarian Grapefruit & Fennel Salad 2 pink grapefruits 2 fennel bulbs, thinly sliced crosswise 1/2 c. almonds, coarsely chopped 3 tbsps. apple juice 1/4 c Plain yogurt salt freshly ground green peppercorns 1 tbsp. fresh flat-leaf parsley, chopped Peel and section the grapefruits; carefully remove all the white membrane surrounding each segment and any seeds. Place in a salad bowl and add the fennel and almonds. In a small bowl sir together the apple juice, yogurt and salt and ground green peppercorns to taste until well mixed. Pour the dressing over the salad and toss well. Sprinkle with the parsley and serve. Note; Apples or strawberries go well alongside or in place of the grapefruit, in which case mint leaves should be used instead of parsley. Pine nuts are an elegant substitute for the almonds.
