Here is a recipe for those who like to eat lotus from the book 'Vegetarian Indian Homestyle Cooking' by Sushma KK. This is a fast food type and is eaten as snack. It is a commonly made dish over here. Lotus rhizomes are available in the market with other vegetables. Please don't ask me the variety! But it is a tasty one.

 

 

 

Lotus Rhizome Delicacy

Ingredients: for 6/30 min

250 g lotus rhizomes

100 g gram flour

50 g onion

½ tsp red chilli

¼ tsp garam masala

½ tsp salt

¼ tsp cumin seeds

a pinch baking soda

a pinch asafoetida

3-4 cloves garlic

2 green chillies

oil

for stuffing:

¾ tsp red chilli

½ tsp garam masala

½ tsp mango powder

to taste salt

Method:

Cut lotus rhizomes into pieces of an inch or so and pressure-cook them in water to one whistle. Split each piece in the middle. Stuff masala into the rhizome pieces. Grind the onion, garlic and green chilies. Add this and the remaining spices and one teaspoon hot oil to the gram flour. Make a smooth batter by adding water. Dip the stuffed lotus stem pieces into the batter and deep fry in hot oil. Serve with tomato sauce or chutney.

masala= is a mixture of ingredients used to add flavor to food, such as chili, salt, dry mango powder, garam masala, etc.
