Guest guest Posted July 20, 2001 Report Share Posted July 20, 2001 My husband didn't even miss the meat! Gimmy Lean Sausage 4 good sized potatoes (or frozen) 6 eggs, lightly whipped. I use egg product " Better 'n eggs " olive oil for frying Cook up " sausage " into crumbles and set aside. Scrub and shredd potatoes. Put olive oil in fry pan add potatoes. Fry until brown, turn over. Poor eggs evenly over potatoes and sprinkle " sausage " on top of eggs. Put a lid on pan and cook until egg is set and bottom of potatoes are brown. Serve immediately.
